Our Story

The Soul of the Souk

Row after row of merchants and vendors line the streets. The sights and smells of toasting nuts, dried chilies, succulent eggplant, fresh herbs, spices of every color and texture you can imagine form the perfect, vibrant towers along the way. The produce from the farmer, the lamb and chicken from the butcher are all displayed for you to see. The sounds of the men and women bartering as small children dart between the stalls, laughing, playing, their eyes wide with excitement.

This is the Souk Shawarma.

It is a journey home for those with childhood memories laced with family trips down to the souk, you eagerly await the meat as it is shaved and layered into piping hot pita bread, topped with chopped salad, tahini, fries, pickles. It is a trip inside your scrapbook for the traveler, the explorer who took a moment to rest and refuel, while navigating the never-ending maze of the souk, and the tried shawarma for the first time. It is the perfect balance of timeless tradition and modern fare for those experiencing the flavor of the Middle East for the first time, just a small window into the vast culture and the flavorful cuisine of the region.

Fire

Wood is important for two main reasons when it comes to cooking, head and smoke. As all great chefs that know their way around a spice rack or an herb garden, learning and studying wood was an important aspect in designing our concept.

Spice

Spice... where do we begin with our infatuation with the suff. Spicesare magical, spices oare mystical. As chefs, spices are our paint, and the ingredients we cook are our canvas. The beauty of spices is that they demand respect. We always use whole spices, and take the time to gently toast some fof our spices to help them release their oils and unlock their aromatic qualities.

Soul

Souk Shawarma is 100% from top to bottom a chef driven concept. It is the brain-child of two chefs who have spent their time on the line, in the trenches, working the typical chef 8-day work week, working 18 plus hour days. It is the type of restaurant/concept serving the type of food that we want to eat after a long shift. It is the "perfet little concept" that we alway wanted to have, it is our "taco truck". It is the type of restaurant that has our heart and soul in every detail, every aspect, every reciped, every little has been pondered over.

Souk

There is a reason why we chose Souk as our restaurant name. Being a chef, and an avid traveller, I am reminded by something a celebrity chef said in one of his traveling episodes... "If you find yourself in a foreign land for the first time, and want to learn about the culture and the people, find you way to the local market and you will expose yourself to the food and culture of that foreign land in the best possible way. " I think back to my first visit to a middle eastern Souk in Tangier and how the experience tickled every single one of my senses and stimulated my imagination.
